I am at a loss here. I know you can insert a surface and change its colour, but I can't find any instructions on how to do so.

To change the color of a surface, click on its outline and a tab will appear with all the possible functions.

@jward - just for info, in the current user manual, the editing of surfaces is covered in detail in section 2.5.6
